Pepitas
Named for the Spanish word for "little seed of squash" pepitas are produced by a special group of "hulless" pumpkins, such as the Styrian, Lady Godiva, and Naked Bear.
Unlike the white-shelled seeds that we roast and crack open after carving a Jack O'Lantern, pepitas are pumpkin seeds that have never had a shell.
In short, all pepitas are pumpkin seeds, but not all pumpkin seeds are pepitas.
Pepitas are high in protein and healthy fat, as well as Vitamins A, B, and E, and minerals like magnesium and iron. Northern Cardinals, Blue Jays, Chickadees, Nuthatches, and Woodpeckers will especially appreciate the pepitas in you feeder!
